Manipulating Data of a Case by an other Case

Hello everyone,
sometimes I have the following Problem, I want to manipulate the data of a case after it has been send to the next task and after it has been send normaly the data shouldn't be changed. In the past I did that in some cases by edditing the data in the database but than the case sometimes got damaged and my dynaforms don't show the data anymore to the users.
1) Does someone know how to fix these kind of broken Cases?
2) Is it possible to build a Process which loads every variables of a specific case and manipulate it's value and after the manipulation close the case of the manipulation process?
