You can use the Custom Case List Plugin in the Enterprise Edition to add extra columns to the Inbox's case list.

If you have the Community Edition, you have to modify the source code. See:
viewtopic.php?f=44&t=736713&p=824469#p824469

Most people using the Community Edition, add case variables to the "Title" under Case Labels, which is much easier.
