Is it possible to have a PDF form on processmaker that can be edited? I know we can have one uploaded and shown in a task, but I was curious if one can be edited as well.

There is nothing in ProcessMaker to make editable PDF forms. You can use pdftk's fill_form which is called in a trigger to fill values in a PDF. See:
