If you have the enterprise edition, you can look up the process category in a trigger and assign it to a case variable which is exported to a Report Table:

Then, use the
Custom Case List Builder plugin to add a column to the Inbox that will display the process category from the Report Table.
There is no easy way to alter the Cases List if you are using the Community Edition. You can create your own plugin to design your own inbox, but that is a lot of work. On easy thing you can do is simply add the category to the title of the case. In the
Case Labels of the Task Properties, you can set the title of the case to contain the @@processCategory variable.
