Is there any way to get the values saved in the __var_changed__ variable in a given instance and save each of those values in another variable?

You can create a trigger like this:

$aVarNames = str_split(',', @@__VAR_CHANGED__);
$aVars = array(); //array of variables that have been changed
$c = new Cases();
$aCase = $c->LoadCase(@@APPLICATION);

foreach ($aVarNames as $aVarName) {
    $aVars[ $aVarName ] = $aCase['APP_DATA'][$aVarName];
}
//now $aVars holds an associative arrays of variables which have changed that can be accessed like this:
if (isset($aVars['clientName'])) {
   @@changedClientName = $aVars['clientName'];
}
